		<description>I didn&#039;t discover my sensitivity until a stressful episode, but it was mainly because I went to the doctor for other things and he had me tested.  Looking back at my life, I have had the symptoms all along and never knew what it was from.</description>

Somehow I missed this posting. Thanks for sharing. I&#039;ve talked to a few people 1:1 about this and they tell a similar story; stress over months or years, then pain, then diagnosis (which, in and of itself can take years). Then there are people think they&#039;ve had it since birth, but were only recently diagnosed. If I&#039;ve had it my whole life, I&#039;ve been completely asymptomatic for 95% of my time here.

Interesting you mention seitan. You really think that contributed?</description>

having been freelance my whole life (except for 18 mos ages ago) in the two years before my hospitalization for and diagnosis of celiac disease i worked full time at two different jobs which were, each in their own way, extremely stressful. my exercise level was healthier for most of those two yrs than any other time in my life, but the stress was almost constant.

i have been a vegetarian for 20 yrs. over the last 5-10 my protein source evolved to be mainly seitan. wondered if that with the stress brought on the attacks. there had always been signs, in retrospect, the the months preceding diagnosis were like being trapped in a war zone. worst time of my life.</description>
